  • basil or oregano
  • fresh dill
  • olive oil

Method of preparation:

Put the potatoes on a grater and put them to harden in the olive oil over low heat in a non-stick pan, together with the onion, pepper and mussels, all finely chopped. Meanwhile, beat the eggs very well together with the spices and dill, and after they have made a little foam (so that the omelette comes out fluffy), add the cheese and grated cheese and mix well. The eggs are also added to the pan, after the vegetables are half cooked. Fry the omelette on both sides for a few minutes, until golden brown.

Serve warm, garnished with greens and possibly a little grated cheese on top, along with a tomato salad and two slices of wholemeal toast.
